Ingredients
  

Marinade
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, finely chopped
  • 2 tablespoons packed brown sugar
  • 1/4 cup soy sauce
  • 1/2 cup pineapple juice
  • 1 cup teriyaki sauce
Chicken and Pineapple
  • 4 pieces boneless, skinless chicken thighs or breasts
  • 1 ripe pineapple, cut into circles
  • Chopped green onions for garnish
  • Toasted sesame seeds for garnish

Method
 

Preparation
  1. Combine teriyaki sauce, pineapple juice, soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl. Stir well to blend.
  2. Place the chicken in a dish or zip bag, pour the marinade over, seal, and chill for at least 2 hours or overnight.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Remove chicken from marinade, keeping the leftover liquid for brushing.
  3. Grill the chicken for 6-7 minutes on each side, brushing with extra marinade as needed until the internal temperature reaches 165°F.
  4. Grill the pineapple rings for 2-3 minutes on each side until charred.
Serving
  1. Dispose of leftover marinade that touched raw chicken.
  2. Serve grilled chicken topped with grilled pineapple, chopped green onions, and sesame seeds.

Notes
