  • 2 cups bell peppers, sliced (any color you prefer)
  • 1 cup red onion, sliced
  • 1 cup pineapple chunks
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the soy sauce, honey, olive oil, garlic powder, ground ginger, salt, and pepper until well combined.
  3. Arrange the chicken breasts on a large sheet pan and surround them with the sliced bell peppers, red onion, and pineapple chunks.
  4. Pour the sauce over the chicken and veggies, ensuring everything is well coated.
Cooking
  1. Slide the pan into your preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  2. Serve hot, ideally over a bed of cooked rice if desired.
