Ingredients
  

For the chicken
  • 2 pieces chicken breasts
  • 1 cup barbecue sauce
For the macaroni salad
  • 2 cups macaroni pasta
  • 1 cup mayonnaise Can use Greek yogurt as a healthier substitute.
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced green onions
  • to taste salt and pepper
  • optional: pineapple chunks for garnish

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts generously with barbecue sauce. Grill them for about 6-7 minutes on each side until fully cooked.
  3. Cook the macaroni pasta according to the package instructions. Once done, drain and set aside.
  4. In a large bowl, combine the cooked pasta, mayonnaise, celery, red bell pepper, and green onions. Season with salt and pepper to taste.
  5. Slice the grilled chicken and serve it atop the macaroni salad. Garnish with pineapple chunks if desired.
