  • 1 lb frozen hash browns, thawed Thaw thoroughly to avoid excess moisture.
  • 1 cup cooked and crumbled sausage or diced ham Feel free to switch the sausage for turkey sausage.
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or pepper jack.
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper Add extra veggies like spinach or mushrooms if desired.
  • 8 large eggs Can be substituted with flaxseed meal or commercial egg replacers.
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter or non-stick cooking spray For greasing the baking dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with butter or cooking spray.
  3. Evenly spread the thawed hash browns in the bottom of the dish.
  4. Sprinkle the crumbled sausage or diced ham on top of the hash browns.
  5. Layer the diced onion and bell pepper over the meat.
  6. Evenly sprinkle the shredded cheddar cheese over the assembled layers.
  7. In a large bowl, whisk together the eggs, milk, salt, and black pepper, mixing well.
  8. Pour the egg mixture evenly over all the layers in the dish.
  9. Gently shake or tap the dish to help the egg mixture disperse through the layers.
  10. Bake in the preheated oven for 45-50 minutes or until the eggs are fully cooked and the top is golden and puffed.
  11. Allow the casserole to cool for about 5 minutes before slicing and serving.
