Method
Mix the patties
- In a bowl, combine ground beef, breadcrumbs, finely chopped onion, egg, and salt and pepper to taste.
- Gently mix just until combined — avoid overworking the meat. Shape into 3–4 oval patties about 3/4 inch thick.
Sear the patties
- Heat oil in a large skillet over medium-high heat.
- Add patties and cook for 4–5 minutes per side until browned and cooked through (internal temp 160°F/71°C). Remove patties to a plate and tent with foil.
Make the gravy
- In the same skillet, add the sliced onions. Reduce heat to medium and cook for 5–7 minutes until softened and starting to brown.
- Sprinkle flour over the onions and stir for 1–2 minutes to cook the raw flour taste.
- Gradually whisk in beef broth and Worcestershire sauce. Bring to a simmer; the gravy will thicken in 2–3 minutes.
Finish
- Return the patties to the skillet, spoon gravy over them, and simmer for 3–5 minutes so flavors meld.
- Taste and adjust seasoning with salt and pepper. Serve hot.

Notes
