  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 cup onion, chopped Yellow or white onion works best.
  • 2 stalks celery, chopped
  • 2 carrots sliced
  • 1 cup green beans, cut into pieces
  • 1 can diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 2 potatoes diced
  • 4 cups vegetable stock
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Method
 

Cooking
  1. In a large pot, brown 1 pound of ground beef over medium heat. Be sure to drain any excess fat.
  2. Add the chopped onion, celery, and sliced carrots to the pot. Sauté until the vegetables soften, about 5 minutes.
  3. Stir in the cut green beans, diced tomatoes, corn, diced potatoes, and vegetable stock.
  4. Season with salt, pepper, garlic powder, and Italian seasoning.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes until the vegetables are tender.
  6. Taste and adjust seasoning as necessary. Serve hot and enjoy!
