  • 1 cup diced celery
  • 0.5 cup finely diced white onion
  • 2 cloves garlic, finely chopped
  • 2 tsp olive oil

  • Salt & pepper to taste
  • 8 cups Progresso Vegetable Stock
  • 2 cups water
  • 1 can Progresso Cannellini Beans
  • 0.5 cup finely chopped parsley for garnish

Preparation
  1. Begin by placing all ingredients, except for the parsley, into your slow cooker.
  2. Stir gently to combine, ensuring everything is well mixed.
  3. If you’re using canned cannellini beans, cover and set your slow cooker to LOW for 1 hour.
  4. If you prefer to use raw beans, extend the cooking time to about 5 hours, adjusting as necessary for tenderness.
  5. When ready, ladle the soup into bowls, garnish with fresh parsley, and serve piping hot.

Notes
