  • 0.5 lb ground beef season to taste
  • 1 tsp olive oil for roasting sweet potatoes
  • 0.5 cup cottage cheese can substitute with plant-based option
  • 1 avocado, sliced optional, for garnish
  • to taste balsamic glaze for drizzling before serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, spread them on a baking sheet, and roast for about 25 minutes or until tender and golden.
Cooking
  1. In a skillet over medium heat, cook the ground beef until it’s browned and thoroughly cooked. Season as desired.
Assembly
  1. In a serving bowl, layer the roasted sweet potatoes, cooked ground beef, cottage cheese, and avocado slices.
  2. Drizzle balsamic glaze over the top before serving.

Notes
