Ingredients
  

Chicken and Marinade

  • 1.5 lbs chicken breasts, cubed Use boneless, skinless chicken breasts for best results.
  • 2 tbsp olive oil
  • 1 tbsp lime juice Fresh lime juice is recommended.
  • 2 tsp chili powder Adjust for spiciness.
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Vegetables and Garnish

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • Fresh cilantro (for garnish)
  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes before using.

Instructions
 

Marinating Chicken

  • In a bowl, mix olive oil, lime juice, and all spices.
  • Add chicken and toss to coat. Marinate for at least 30 minutes.

Assembling and Grilling

  • Thread chicken and peppers onto skewers.
  • Cook on a preheated grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is cooked through and charred.

Serving

  • Garnish with fresh cilantro and enjoy hot!

Notes

Serve with sides like rice, grilled corn, or a fresh salad. Great with warm tortillas, salsa, or guacamole. If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, use the oven or grill until warmed through.
