  • 2 ears corn, husked
  • 1 piece ripe avocado, diced
  • 2 tablespoons olive oil
  • 1 piece lime, juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • 1/4 cup fresh cilantro, chopped (optional)

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, whisk together the olive oil, lime juice, garlic powder, paprika, salt, and pepper until well combined.
  3. Brush the marinade generously over the chicken breasts, ensuring they’re fully coated.
Cooking
  1. Place the chicken on the grill, cooking for about 6-8 minutes per side until it’s cooked through and has nice grill marks.
  2. While your chicken cooks, throw the corn on the grill and allow it to roast for about 10 minutes, turning occasionally.
  3. Once everything is cooked, slice the grilled chicken and cut the corn off the cob.
Assembly
  1. In a large serving bowl, mix together the diced avocado, sliced chicken, and grilled corn.
  2. Add chopped cilantro on top for a burst of color and flavor, if desired.
