Preparation
- Preheat the grill to medium heat.
- Cut the apricots in half and remove the pits.
Grilling
- Place the apricot halves on the grill cut-side down and grill for about 3-5 minutes, until they are caramelized and have grill marks.
Assembly
- In a bowl, mix the whipped goat cheese with fresh thyme.
- Drizzle honey over the grilled apricots and top with the whipped goat cheese mixture.

Notes
If you have leftovers, store the grilled apricots in an airtight container in the fridge for up to two days. The whipped goat cheese can also be kept separately. Reheat the apricots gently on a grill or in a pan before serving again. For added texture and decoration, you can sprinkle crushed nuts on top.
