  • 4 pieces ripe but firm apricots, halved and pitted Choose apricots that are ripe but still firm for the best grilling results.
  • 1 cup Whipped goat cheese Can be substituted with ricotta or mascarpone for a different flavor.
  • to taste Fresh thyme Add extra thyme leaves for garnish if desired.
  • 2 tablespoons Honey Use a vegan-friendly honey if necessary.

Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. Cut the apricots in half and remove the pits.
Grilling
  1. Place the apricot halves on the grill cut-side down and grill for about 3-5 minutes, until they are caramelized and have grill marks.
Assembly
  1. In a bowl, mix the whipped goat cheese with fresh thyme.
  2. Drizzle honey over the grilled apricots and top with the whipped goat cheese mixture.
  3. Serve warm and enjoy!

Notes

If you have leftovers, store the grilled apricots in an airtight container in the fridge for up to two days. The whipped goat cheese can also be kept separately.
