  • 1 cup whipped goat cheese You can substitute with ricotta or mascarpone for a different flavor.
  • 1 tbsp fresh thyme Add extra thyme leaves for decoration if desired.
  • 2 tbsp honey Ensure honey is vegan-friendly if required.

Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. Cut the apricots in half and remove the pits.
Grilling
  1. Place the apricot halves on the grill cut-side down and grill for about 3-5 minutes, until they are caramelized and have grill marks.
Assembly
  1. In a bowl, mix the whipped goat cheese with fresh thyme.
  2. Drizzle honey over the grilled apricots and top with the whipped goat cheese mixture.
  3. Serve warm and enjoy!
