Ingredients
  

For the Dressing
  • 1 cup Greek yogurt
  • 1/4 cup mayonnaise Can be substituted with more Greek yogurt for a lighter option.
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons fresh tarragon, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste
For the Salad
  • 2 cups cooked and shredded chicken breast Leftover chicken works great.
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • Mixed salad greens or lettuce For serving.

Method
 

Preparation
  1. In a large mixing bowl, combine the Greek yogurt and mayonnaise. Stir until smooth.
  2. Add the fresh parsley, basil, tarragon, chives, lemon juice, red wine vinegar, and minced garlic to the bowl. Mix thoroughly to create the Green Goddess dressing.
  3. Season the dressing with salt and pepper to taste. Adjust as necessary.
  4. Add the shredded chicken and coat it fully with the dressing.
  5. Gently fold in the diced cucumber, halved cherry tomatoes, and crumbled feta cheese.
  6. Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired.
Serving
  1. Serve the chicken salad over a bed of mixed greens. Optionally, garnish with additional fresh herbs.

Notes
