  • 1 large slice 1 large round slice of seedless watermelon (cut 1-inch thick) Use a ripe watermelon for the best taste.
  • 1/4 cup 1/4 cup cherry tomatoes, diced
  • 2 tbsp 2 tbsp Kalamata olives, sliced
  • 1/4 cup 1/4 cup feta cheese, crumbled Can be replaced with vegan cheese for a vegan option.
  • 1 tbsp 1 tbsp fresh mint, chopped Can substitute with basil or cilantro.
  • 1 tsp 1 tsp olive oil Optional drizzle.
  • 1 pinch Pinch of sea salt Optional.

Preparation

  • Lay the watermelon slice flat on a cutting board.
  • Cut the watermelon into 6–8 wedges like a pizza.
  • Top each wedge with diced tomatoes and sliced olives.
  • Sprinkle crumbled feta cheese on top.
  • Add chopped fresh mint for flavor.
  • Drizzle lightly with olive oil, if using, and sprinkle with sea salt if desired.

Serving

  • Serve chilled on a slate board or platter and enjoy!
