- In a bowl, combine chicken thighs with olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. Allow to marinate for at least 30 minutes.
- Grill the marinated chicken over medium-high heat until cooked through, approximately 5-7 minutes per side.
- Meanwhile, prepare the tzatziki. In a bowl, mix together Greek yogurt, grated and drained cucumber, minced garlic, olive oil, chopped fresh dill, salt, and pepper. Chill until ready to use.
- Warm the pita bread.
- Slice the cooked chicken into strips.
- To assemble the gyros, spread tzatziki on each warmed pita bread. Top with sliced chicken, red onion, tomato, and cucumber slices.
- Serve immediately and enjoy your delicious Greek Chicken Gyros!
Notes
For extra flavor, consider adding sliced red bell peppers, olives, or feta cheese to your gyros.
