Ingredients
  

For the Brioche Buns
  • 200 ml warm water not hotter than 40 degrees
  • 3 tablespoons milk
  • 2.5 tablespoons sugar
  • 1 packet dry yeast
  • 2 pieces eggs
  • 485 g all-purpose flour (550 type)
  • 1.5 teaspoons salt
  • 80 g soft butter
  • optional sesame seeds for topping
For the Patties
  • 1200 g chuck beef or ready-made ground beef as an alternative
  • 15 g salt
  • to taste pepper
  • for frying as needed oil
  • 8 slices sandwich cheese
For the Toppings
  • 16 pieces green olives pitted and sliced
  • 2 pieces red bell peppers sliced
  • 1 jar sandwich pickles
  • to taste ketchup
  • as needed Lollo Rosso lettuce
  • as needed Riffelpommes (fries) as a side

Method
 

Make the Brioche Buns
  1. In a bowl, combine warm water, milk, sugar, and dry yeast. Let it sit until bubbly.
  2. Beat in the eggs, then add in the flour, salt, and softened butter. Knead until smooth, cover, and let it rise for about 1 hour.
Shape the Buns
  1. After the dough has doubled in size, divide it into equal parts and shape into balls.
  2. Arrange on a baking sheet, sprinkle sesame seeds on top if desired, and let rise for another 30 minutes.
Prepare the Patties
  1. Heat a pan with oil. Season the beef with salt and pepper, then form into patties.
  2. Cook on medium heat until they reach your preferred doneness.
Prepare the Toppings
  1. While the patties are cooking, slice the bell peppers, pit and slice the olives, and set aside your cheese, pickles, and lettuce.
Bake the Buns
  1. Preheat the oven to 180°C (350°F) and bake the buns for about 15-20 minutes or until golden brown.
  2. Let them cool before slicing.
Assemble the Burgers
  1. Layer the bottom bun with lettuce, a beef patty, cheese, bell pepper, green olives, and a dash of ketchup.
  2. Top off with the upper bun.
Serve with Riffelpommes
  1. A side of crispy fries is the perfect companion to your beautifully assembled burgers.
