Preparation
- Lightly brush the sourdough rounds with olive oil or melted butter. Toast them in a hot skillet or a 180°C (350°F) oven until golden and crisp. Set aside to cool.
- In a bowl, gently mix the smoked trout, crème fraîche, lemon juice, Dijon mustard, chives, and salt & pepper. Keep this mixture chilled.
- Combine the diced cucumber with the passionfruit pulp, honey (if using), and salt. Stir gently and chill.
Assembly
- Place a spoonful of the trout mixture on each sourdough round. Add a mound of the passionfruit-cucumber relish on top.
- Finish each disc with a generous spoon of caviar, a sprig of dill, and an edible flower. Serve immediately.

Notes
It's best to serve these discs right after preparing them. Store components separately; trout mixture and relish in airtight containers for up to a day. Toasted sourdough can be kept in a paper bag.
