Ingredients
  

For the Discs
  • 6 slices small sourdough slices, cut into 5–6 cm rounds Ensure the sourdough is fresh for best texture.
  • 1 tbsp olive oil or melted butter, for toasting Used for brushing the sourdough.
For the Topping
  • 200 g smoked trout, finely diced Fresh smoked trout gives the best flavor.
  • 2 tbsp crème fraîche or sour cream Adds creaminess to the topping.
  • 1 tbsp fresh lemon juice Adjust based on your taste preference.
  • 1 tsp Dijon mustard Adds a slight tang.
  • 2 tbsp chopped chives For garnish and flavor.
  • to taste Salt & pepper For seasoning.
  • 1/2 cucumber seeds removed, diced small Adds crunch to the relish.
  • 2 pieces passionfruit (pulp only) Key ingredient for the relish.
  • 1 tsp honey (optional, for balance) Adjust based on sweetness preference.
  • pinch salt Enhances flavors.
  • 3 tbsp salmon roe (ikura) or golden whitefish caviar For the final topping.
  • to taste Fresh dill sprigs Optional garnish.
  • to taste Edible flowers (pansies or violas) For presentation.
  • to taste Microgreens or flat-leaf parsley (optional) For garnish.

Method
 

Preparation
  1. Lightly brush the sourdough rounds with olive oil or melted butter. Toast them in a hot skillet or a 180°C (350°F) oven until golden and crisp. Set aside to cool.
  2. In a bowl, gently mix the smoked trout, crème fraîche, lemon juice, Dijon mustard, chives, and salt & pepper. Keep this mixture chilled.
  3. Combine the diced cucumber with the passionfruit pulp, honey (if using), and salt. Stir gently and chill.
Assembly
  1. Place a spoonful of the trout mixture on each sourdough round. Add a mound of the passionfruit-cucumber relish on top.
  2. Finish each disc with a generous spoon of caviar, a sprig of dill, and an edible flower. Serve immediately.

Notes

It's best to serve these discs right after preparing them. Store components separately; trout mixture and relish in airtight containers for up to a day. Toasted sourdough can be kept in a paper bag.
