For the Bruschetta

  • 1 piece French baguette, sliced into ¼-inch pieces
  • 1 cup creamy goat cheese
  • ½ cup shelled pistachios, roughly chopped
  • ¼ cup honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Fresh herbs for garnish (optional)

Preparation

  • Preheat the oven to 375°F (190°C).
  • Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil.
  • Toast them in the oven for about 5-7 minutes or until they turn golden brown and crispy.
  • While the bread is toasting, mix the goat cheese and honey in a bowl until smooth. Season it with a pinch of salt and pepper.
  • Once the crostini are ready, remove them from the oven and let them cool slightly.
  • Spread the honey goat cheese mixture generously on top of each toasted piece.
  • Sprinkle the chopped pistachios on top, and add a drizzle of balsamic glaze. If you have fresh herbs, garnish for an extra pop of flavor.
  • Serve immediately and enjoy!

Notes

This bruschetta can easily adapt to seasonal ingredients. For a spicy kick, stir in some crushed red pepper flakes into the honey goat cheese mixture. You can prepare the goat cheese mixture ahead of time and store it in the fridge.
