Ingredients
  

Main Ingredients
  • 180 g Fine Gram Flour (chickpea flour)
  • 2 tsp Dried Thyme Feel free to swap for your favorite herbs or spices.
  • 1 tsp Salt
  • 65 mL Extra Virgin Olive Oil
  • 65 mL Water

Method
 

Preparation
  1. Preheat your oven to 150°C (300°F) static, placing a large baking tray inside to warm up.
  2. In a bowl, combine the gram flour, salt, and half of the dried thyme.
  3. Pour in the olive oil. Using your fingertips, rub the oil into the flour until it resembles a crumbly dough.
  4. Gradually add water, starting with half and mixing it in until you have a compact and pliable dough.
  5. Roll out the dough between two sheets of baking paper to a thickness of about 2 mm.
  6. With a long knife or a wheel cutter, mark the outlines of your crackers.
  7. Make some small holes in the dough using a fork to allow steam to escape while they bake.
Baking
  1. Transfer the cracker slab onto the hot baking tray and bake for 20 minutes, rotating the tray halfway.
  2. Once done, cool the baked crackers completely on a wire rack to allow them to crisp up.

Notes

Store crackers in an airtight container at room temperature for up to a week. For longer storage, freeze them in a zip-lock bag after cooling.
