Preparation
- Preheat your oven to 150°C (300°F) static, placing a large baking tray inside to warm up.
- In a bowl, combine the gram flour, salt, and half of the dried thyme.
- Pour in the olive oil. Using your fingertips, rub the oil into the flour until it resembles a crumbly dough.
- Gradually add water, starting with half and mixing it in until you have a compact and pliable dough.
- Roll out the dough between two sheets of baking paper to a thickness of about 2 mm.
- With a long knife or a wheel cutter, mark the outlines of your crackers.
- Make some small holes in the dough using a fork to allow steam to escape while they bake.
Baking
- Transfer the cracker slab onto the hot baking tray and bake for 20 minutes, rotating the tray halfway.
- Once done, cool the baked crackers completely on a wire rack to allow them to crisp up.

Notes
Store crackers in an airtight container at room temperature for up to a week. For longer storage, freeze them in a zip-lock bag after cooling.
