Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper and set aside.
- In a saucepan, combine the unsalted butter, molasses, and light corn syrup over medium-low heat. Heat until the butter melts completely.
- In a large mixing bowl, combine the all-purpose flour and light brown sugar. Stir until combined.
- Pour the melted butter mixture into the flour and sugar mixture, stirring well.
- Add the large eggs, spices, baking powder, and salt, mixing until everything is fully incorporated.
- Using a cookie scoop, gather 1-2 tablespoons of dough and place them on the baking sheet, leaving 2 inches of space between each cookie.
Baking
- Bake for about 15-20 minutes until the edges are firm.
- While the cookies are baking, prepare the glaze by mixing the powdered sugar, lemon juice, and vanilla in a small bowl until smooth.
- Once the cookies have baked, let them cool for 5 minutes before transferring them to a wire rack.
- Using a basting brush, gently glaze each cookie.
- Allow the glaze to harden before serving.
