Ingredients
  

For the cookies
  • ¾ cup Unsalted butter
  • 2 Tbsp. Molasses
  • 1/3 cup Light corn syrup Can be substituted with honey or maple syrup.
  • cups All-purpose flour Ensure proper measurement for best texture.
  • 1 1/3 cups Light brown sugar (packed)
  • 2 large Eggs
  • ½ Tbsp. Ground cinnamon Feel free to substitute with your favorite spices.
  • ¼ tsp. Ground cloves
  • ½ tsp. Ground ginger
  • ¼ tsp. Ground nutmeg
  • 1 tsp. Baking powder
  • ¼ tsp. Salt
For the glaze
  • 1 cup Powdered sugar
  • 1 Tbsp. Juice of lemon
  • 1 tsp. Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and set aside.
  3. In a saucepan, combine the unsalted butter, molasses, and light corn syrup over medium-low heat. Heat until the butter melts completely.
  4. In a large mixing bowl, combine the all-purpose flour and light brown sugar. Stir until combined.
  5. Pour the melted butter mixture into the flour and sugar mixture, stirring well.
  6. Add the large eggs, spices, baking powder, and salt, mixing until everything is fully incorporated.
  7. Using a cookie scoop, gather 1-2 tablespoons of dough and place them on the baking sheet, leaving 2 inches of space between each cookie.
Baking
  1. Bake for about 15-20 minutes until the edges are firm.
  2. While the cookies are baking, prepare the glaze by mixing the powdered sugar, lemon juice, and vanilla in a small bowl until smooth.
  3. Once the cookies have baked, let them cool for 5 minutes before transferring them to a wire rack.
  4. Using a basting brush, gently glaze each cookie.
  5. Allow the glaze to harden before serving.

Notes
