Ingredients
  

For the fries
  • 4 medium fresh potatoes (russets work best) You can also use sweet potatoes for a healthier twist.
  • 3-4 cloves minced garlic Use more if you prefer a stronger garlic flavor.
  • 1/4 cup sweet cream butter Melted before mixing with garlic.
  • 1 cup fresh grated Parmesan cheese Preferably aged for depth of flavor.
  • to taste salt Freshly cracked pepper to taste.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) if baking the fries.
  2. Cut your potatoes into strips, about 1/4 inch thick.
  3. Soak the fries in cold water for at least 30 minutes to remove excess starch.
  4. Drain and pat dry the fries with a towel.
  5. Melt the butter in a small saucepan and add the minced garlic, cooking until fragrant (about 1-2 minutes).
Cooking
  1. Toss the fries with garlic butter and season with salt and pepper.
  2. Spread the fries evenly on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy and golden.
  3. Remove from the oven and immediately toss with Parmesan cheese while they are still hot.

Notes
