Preparation
- Start by washing and halving the baby potatoes, and set them aside.
- Mince the garlic.
- Rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
Cooking
- Place the halved potatoes at the bottom of the crockpot.
- Layer the seasoned chicken on top of the potatoes.
- Pour the chicken broth over the ingredients in the crockpot.
- Sprinkle the minced garlic and grated parmesan cheese on top.
- Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is fork-tender.
- Ensure the chicken reaches an internal temperature of 165°F (75°C) and that the potatoes can be pierced easily with a fork.
Serving
- Carefully remove the chicken and potatoes from the crockpot, spooning any remaining sauce over the dish.
- Garnish with chopped fresh parsley before serving.
