Ingredients
  

Wet Ingredients
  • 1 cup milk
  • 2 large eggs, lightly beaten
Dry Ingredients
  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley

  • 4 cloves garlic, minced
  • ¼ cup chicken broth For moistening the meatloaf
  • 2 tablespoons butter, melted For garlic butter topping

Method
 

Preparation
  1. In a large mixing bowl, whisk together the milk and lightly beaten eggs.
  2. Add the panko bread crumbs, Parmesan cheese (½ cup), Italian seasoning, salt, and pepper to the wet ingredients. Mix until just combined.
  3. Heat olive oil in a small skillet over medium heat. Add minced garlic and sauté for 1-2 minutes, or until fragrant.
  4. Pour the sautéed garlic and oil into the mixing bowl with the other ingredients. Add the chopped fresh parsley.
  5. Gently add the ground chicken to the mixing bowl. Mix everything together until just combined.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×5 inch loaf pan with cooking spray or olive oil.
  3. Gently transfer the meatloaf mixture to the prepared loaf pan. Shape the mixture into an even loaf.
  4. In a small bowl, combine the melted butter and garlic powder.
  5. Brush the top of the meatloaf with the garlic butter mixture.
  6. Sprinkle the top of the meatloaf with additional grated Parmesan cheese.
  7. Pour the chicken broth into the bottom of the loaf pan, around the meatloaf.
  8. Place the loaf pan in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Check that the meatloaf is done when the internal temperature reaches 165°F (74°C) and the juices run clear when pierced with a fork.
  10. Once cooked through, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.
  11. After resting, carefully slice the meatloaf into even slices.
  12. Serve the Garlic Parmesan Chicken Meatloaf immediately.
