  • 8 ounces linguine pasta Substitute gluten-free linguine for a gluten-free version.
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces Rotisserie or leftover cooked chicken works well.
  • 2 tablespoons olive oil
For the sauce
  • 4 cloves garlic, minced
  • 1 cup heavy cream Can swap for half-and-half for a lighter option.
  • 1 cup shredded sharp cheddar cheese Freshly shredded gives the best flavor.
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking the Pasta
  1. Begin by cooking the linguine according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving some pasta water.
Preparing the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken pieces, season with salt and pepper, and sauté until they are cooked through and golden. Remove and set aside.
Making the Sauce
  1. In the same skillet, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
  2. Pour in the heavy cream (or half-and-half if you prefer) and stir while bringing the mixture to a simmer.
  3. Gradually add the sharp cheddar and Parmesan cheese, stirring until melted and creamy.
  4. Stir in the cooked chicken and Italian seasoning, mixing well to combine.
  5. Finally, toss in the linguine. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency. Mix well.
Serving
  1. Adjust seasoning as needed, and serve hot, garnished with fresh parsley.

Notes
