  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • to taste Salt & black pepper
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional) For a vegan option, use dairy-free cheese.
  • for garnish Fresh parsley

Method
 

Preparation
  1. In a large skillet over medium heat, add the olive oil and butter.
  2. Once the butter starts to foam, toss in the cauliflower florets and sauté for about 5-6 minutes until they start turning golden.
  3. Add the sliced mushrooms and cook for an additional 4-5 minutes, stirring occasionally.
  4. Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and pepper. Cook for another 2 minutes until the aroma fills the kitchen.
  5. Drizzle fresh lemon juice over the veggies, sprinkle with Parmesan cheese (if using), and garnish with parsley before serving.

Notes

If you have leftovers, store them in an airtight container in the fridge for 3-4 days. Reheat in a skillet over medium heat, adding a splash of water or broth to maintain moisture. Consider adding spinach, kale, or proteins for a varied dish.
