Ingredients
  

For the Steak
  • 1 pound steak (sirloin or ribeye), cut into bite-sized pieces Any tender cut works.
  • 1 teaspoon salt (for steak)
  • 1/2 teaspoon black pepper (for steak)
  • 1 teaspoon dried thyme or rosemary Use thyme for subtle herb note; rosemary for piney intensity.
  • 2 cloves garlic, minced (for steak) Half for steak.
For the Potatoes
  • 2 cups baby potatoes, halved Swap Yukon Gold or small red potatoes if not available.
  • 4 tablespoons butter, melted (divided) Use olive oil instead of half the butter for a lighter finish.
  • 1 teaspoon salt (for potatoes)
  • 1/2 teaspoon black pepper (for potatoes)
  • 2 cloves garlic, minced (for potatoes) Half for potatoes.
  • 1 tablespoon fresh parsley, chopped (for serving)

Method
 

Preparation
  1. Cut steak into 1-inch bite-sized pieces and pat dry with paper towels.
  2. In a bowl, toss steak with 1 tsp salt, 1/2 tsp pepper, 1/2 of the minced garlic, and the dried thyme or rosemary.
  3. Halve baby potatoes and toss them with 2 tablespoons melted butter, 1 tsp salt, 1/2 tsp pepper, and the remaining minced garlic.
Cooking
  1. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  2. Arrange the potatoes in a single layer and air-fry at 400°F for 8–10 minutes until just tender and beginning to brown. Remove and set aside.
  3. Add the seasoned steak in a single layer (don’t crowd) and air-fry at 400°F for 4–6 minutes until browned, shaking or turning halfway.
  4. Return potatoes to the basket with the steak, drizzle remaining melted butter over everything, and air-fry for an additional 1–2 minutes to marry the flavors.
  5. Remove from air fryer, sprinkle with chopped parsley, and serve immediately.

Notes

Cool leftovers for no more than 2 hours, then refrigerate in an airtight container. Eat within 3–4 days. To reheat, spread leftovers in a single layer in the air fryer at 350°F for 3–5 minutes. Can also be reheated in a skillet.
