Preparation
- Cut steak into 1-inch bite-sized pieces and pat dry with paper towels.
- In a bowl, toss steak with 1 tsp salt, 1/2 tsp pepper, 1/2 of the minced garlic, and the dried thyme or rosemary.
- Halve baby potatoes and toss them with 2 tablespoons melted butter, 1 tsp salt, 1/2 tsp pepper, and the remaining minced garlic.
Cooking
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Arrange the potatoes in a single layer and air-fry at 400°F for 8–10 minutes until just tender and beginning to brown. Remove and set aside.
- Add the seasoned steak in a single layer (don’t crowd) and air-fry at 400°F for 4–6 minutes until browned, shaking or turning halfway.
- Return potatoes to the basket with the steak, drizzle remaining melted butter over everything, and air-fry for an additional 1–2 minutes to marry the flavors.
- Remove from air fryer, sprinkle with chopped parsley, and serve immediately.

Notes
Cool leftovers for no more than 2 hours, then refrigerate in an airtight container. Eat within 3–4 days. To reheat, spread leftovers in a single layer in the air fryer at 350°F for 3–5 minutes. Can also be reheated in a skillet.
