Preparation of Mashed Potatoes
- Place the cubed russet potatoes in a pot filled with salted water.
- Bring to a boil and let cook until tender, about 15-20 minutes.
- Drain and return to the pot, then mash with butter and heavy cream (or milk) until creamy.
- Season with salt and pepper, then keep warm while preparing the steak.
Cooking the Steak Bites
- In a skillet, heat olive oil over medium-high heat.
- Sear steak bites for 2-3 minutes on each side until browned, then remove from skillet.
Making the Garlic Butter
- In the same skillet, reduce heat and add butter.
- Once melted, add minced garlic and cook until fragrant.
- Stir in thyme, then return steak bites to skillet, tossing in garlic butter for 1-2 minutes, seasoning to taste.
Serving
- Plate the creamy mashed potatoes.
- Top with garlic butter steak bites and garnish with parsley and chives if desired.

Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat. Freezing cooked steak bites is possible for up to 3 months if stored separately from mashed potatoes.
