Method
 

Preparation
  1. Cut the beef into bite-sized pieces and halve the baby potatoes. Optionally parboil the potatoes to soften them slightly.
Searing
  1. Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides.
Garlic Butter Sauce
  1. In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper until combined.
Slow Cooking
  1. In your slow cooker, place the halved baby potatoes and the seared beef. Pour the garlic butter sauce on top, and add the beef broth.
  2. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender and juicy.
Serving
  1. Let the dish rest for 10 minutes before serving to enhance the flavors.
