Ingredients
  

For the Hash Browns:
  • 1 2 lb. bag frozen cubed hash browns thawed
For the Sauce:
  • 10 tablespoons salted butter melted and divided
  • 1 10.5 oz. can cream of chicken soup
  • 2 cups sour cream
  • 1/4 cup white onion finely diced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups shredded cheddar cheese
For the Topping:
  • 3 cups cornflakes
  • 1 teaspoon fresh chopped parsley

Equipment

  • 13 x 9" baking pan
  • Large Bowl
  • Medium-sized bowl

Method
 

Preparing Baking Pan:
  1. Preheat the oven to 350°F and spray a 13 x 9" baking pan with non-stick cooking spray.
Mixing Potato Mixture:
  1. In a large bowl, stir together hash browns, 4 tablespoons of butter, cream of chicken soup, sour cream, onion, salt, black pepper, garlic powder, onion powder, and cheese until well combined.
  2. Pour the mixture into the prepared baking dish.
Preparing Topping:
  1. In a medium-sized bowl, lightly crush cornflakes and toss them with the remaining 6 tablespoons of butter.
Adding Topping and Baking:
  1. Sprinkle the cornflake mixture evenly over the top of the potatoes.
  2. Bake for 40 to 45 minutes or until golden brown.
Serving:
  1. Top with parsley and serve hot.
  2. Enjoy your dish!

Notes

If you're not a fan of sour cream or don't have it on hand, there are alternative options available for your Funeral Potatoes. Greek yogurt is a healthier alternative that can be used instead. Additionally, buttermilk can serve as a great substitute for sour cream. Opt for one of these alternatives to ensure your potatoes maintain their creamy texture.
