Ingredients

Fruit Mixture
  • 4 cups sliced or diced fruits Use peaches, berries, apples, or any fruit you prefer.
  • 1/2 cup sugar (for the fruit)
  • 1 tbsp lemon juice
  • 2 tbsp cornflour Check notes for details.
  • 1/2 tsp ground cinnamon Optional.
Cobbler Topping
  • 1 cup all-purpose flour Can substitute with Maida.
  • 1/2 cup sugar (for the topping)
  • 1.5 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1/2 cup melted butter 1 stick.
  • 1 tsp vanilla extract

Method

Preparation
  1. Preheat your oven to 375°F (190°C). Choose a suitable baking dish, like a 9x9 inch or 9x13 inch pan.
  2. In the baking dish, combine the sliced or diced fruit with 1/2 cup sugar, lemon juice, cornflour, and ground cinnamon (if using). Mix until the fruit is evenly coated and spread it evenly in the dish.
Cobbler Topping
  1. In a separate bowl, prepare the cobbler topping by combining all-purpose flour, sugar, baking powder, and salt. Stir thoroughly.
  2. Gradually mix in the melted butter, milk, and vanilla extract until a thick batter forms.
Baking
  1. Drop spoonfuls of the cobbler batter on top of the fruit, spreading as best as you can while leaving some gaps for the juices to bubble through.
  2. Bake in the preheated oven for about 35-40 minutes, until the fruit is bubbly and the cobbler topping turns golden brown.
Serving
  1. Once baked, let the cobbler cool slightly before serving. Enjoy warm or at room temperature, with or without ice cream or whipped cream.

For an extra flavor boost, add a splash of almond extract to the topping. You can also sprinkle oats or nuts into the topping for crunch. Always taste fruits before adding sugar to adjust to desired sweetness.
