- Add softened cream cheese to a mixer bowl and beat at medium speed until smooth.
- Add sweetened condensed milk and continue beating at medium speed, about 2 minutes.
- Fold in 1 cup of crushed pineapple with the juice.
- Pour into graham cracker pie crust.
- Cover and freeze for 4 to 6 hours or until frozen solid.
- Remove pie from freezer and garnish with Cool Whip, reserved drained pineapple or fresh diced pineapple, and mint leaves.
- Let the pie stand at room temperature for about 10 minutes before slicing.
- Return covered pie to the freezer immediately.
Notes
This Frozen Pineapple Pie can be made ahead of time and stored in the freezer for up to a week. Simply remove it from the freezer and let it stand at room temperature for a few minutes before serving.
