Ingredients
  

For the potato and sausage mixture
  • 2 lbs baby red potatoes, cut into 1-1½ inch pieces Can substitute with regular red or gold potatoes.
  • 8 oz smoked sausage or kielbasa, cut into 1-inch pieces Can substitute with turkey or chicken sausage.
For the vegetables
  • 1 large onion, sliced into thick half circles
  • 1 large red bell pepper, cut into 1-inch pieces
  • 8 oz fresh mushrooms, halved or quartered
For seasoning
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 tbsp spice/dry herb blend
  • to taste Salt
  • to taste ground black pepper
For garnish
  • to taste Fresh herbs (parsley, thyme, chives, dill) For garnish.

Method
 

Preparation
  1. Preheat your oven to 475°F, placing a large baking sheet inside to heat up.
  2. Boil the potatoes in a pot of water for about 5 minutes, just until they’re halfway cooked, and then drain.
  3. In a bowl, mix the onion, bell pepper, mushrooms, olive oil, garlic, thyme, salt, pepper, and dry herbs to create a flavorful veggie mixture.
  4. Toss the partially cooked potatoes in the bowl with the sausage, ensuring everything is well-coated.
  5. Spread the entire mixture evenly on the hot baking sheet in a single layer.
Cooking
  1. Roast in the oven for 20-30 minutes, giving it a stir halfway through, until everything is golden and crispy.
  2. For an extra crunchy finish, broil for a minute or two if you wish!
  3. Finish off with a sprinkle of fresh herbs before serving.
