Ingredients
  

For the Peach Filling
  • 8 large fresh peaches (peeled, pitted, and sliced) Use ripe peaches for the best flavor.
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
For the Crust
  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter (cut into small pieces) Can use any vegan butter.
  • 1/3 cup boiling water
For the Topping
  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the sliced peaches with brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg. Stir until the peaches are well coated.
Baking the Peaches
  1. Pour the fruit mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
  2. While the peaches bake, prepare the crust. In a medium mixing bowl, whisk together flour, sugars, baking powder, and salt.
  3. Using a pastry blender, mix the butter into the flour mixture until it resembles crumbs.
  4. Pour in the boiling water and stir until just combined. Spoon this mixture gently over the baked peaches, making sure to cover them evenly.
  5. In a small bowl, mix the organic sugar and cinnamon together, and sprinkle it over the cobbler topping.
  6. Bake for approximately 35 minutes or until the topping is golden brown.
Serving
  1. Serve warm, ideally topped with dairy-free vanilla ice cream or ice cream of your choice.

Notes
