Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced peaches with brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg. Stir until the peaches are well coated.
Baking the Peaches
- Pour the fruit mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
- While the peaches bake, prepare the crust. In a medium mixing bowl, whisk together flour, sugars, baking powder, and salt.
- Using a pastry blender, mix the butter into the flour mixture until it resembles crumbs.
- Pour in the boiling water and stir until just combined. Spoon this mixture gently over the baked peaches, making sure to cover them evenly.
- In a small bowl, mix the organic sugar and cinnamon together, and sprinkle it over the cobbler topping.
- Bake for approximately 35 minutes or until the topping is golden brown.
Serving
- Serve warm, ideally topped with dairy-free vanilla ice cream or ice cream of your choice.
