  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Wet Ingredients
  • 1 tablespoon apple cider vinegar or white vinegar
  • 5 tablespoons vegetable oil or canola oil
  • 1.5 teaspoons pure vanilla extract
  • 1 cup water
Fruits and Nuts
  • 1 cup Granny Smith apples, peeled and chopped or your favorite baking apple
  • 0.5 cup pecans, coarsely chopped or walnuts

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Spray an 8"x 8" baking dish with non-stick cooking spray.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. Make three small depressions in the dry ingredients—two small ones and one larger.
  4. Pour the apple cider vinegar into one depression, the vanilla extract into another, and the oil into the larger one.
  5. Pour water over everything and mix until the batter is smooth.
  6. Gently mix in the chopped apples and coarsely chopped nuts.
  7. Pour the batter into the prepared baking dish.
Baking
  1. Place in the middle rack of the oven and bake for about 40-45 minutes. Check with a toothpick to ensure it comes out clean. Adjust your baking time if necessary.
  2. Let the cake cool for about 15 minutes before serving.
