Preparation
- Preheat your oven to 350 degrees F. Spray an 8"x 8" baking dish with non-stick cooking spray.
- In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- Make three small depressions in the dry ingredients—two small ones and one larger.
- Pour the apple cider vinegar into one depression, the vanilla extract into another, and the oil into the larger one.
- Pour water over everything and mix until the batter is smooth.
- Gently mix in the chopped apples and coarsely chopped nuts.
- Pour the batter into the prepared baking dish.
Baking
- Place in the middle rack of the oven and bake for about 40-45 minutes. Check with a toothpick to ensure it comes out clean. Adjust your baking time if necessary.
- Let the cake cool for about 15 minutes before serving.
