Method
Preparation
- In a large skillet over medium heat, melt the butter and then add the sliced onions. Stir occasionally for about 12-15 minutes until softened and browned, but not burnt.
- Mix in the thyme, salt, and pepper, then take the skillet off the heat and set aside.
- Preheat your oven to 350°F.
- Keep the rolls intact and slice them horizontally to separate the tops from the bottoms. Place the bottoms in an 11x7 baking dish with the cut side facing up.
- Layer half of the provolone cheese over the rolls, followed by a generous portion of sliced roast beef. Spread the sautéed onions evenly on top.
- Add the remaining cheese, then place the tops of the rolls back on.
Baking
- In a small bowl, whisk together the melted butter and onion soup mix, then brush or drizzle it over the rolls, ensuring an even coating.
- Cover the dish loosely with foil, ensuring it doesn’t touch the tops of the rolls, and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes to achieve a golden brown on the rolls.
- While baking, prepare the au jus according to the package instructions by mixing the gravy mix with 3 cups of water.
- Serve the sliders warm with a sprinkle of fresh parsley for garnish and the au jus on the side for dipping.

Notes
For extra flavor, consider adding a splash of Worcestershire sauce while cooking the onions. If you prefer a crisper top on your sliders, broil them for a minute after baking, but keep a close eye to avoid burning. And always, always taste as you go!
