Ingredients

For the Sliders
  • 3 tablespoons unsalted butter For sautéing the onions
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 pieces sweet rolls Keep rolls intact until preparing
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef
  • 1/2 cup unsalted butter, melted For topping
  • 1.5 tablespoons dried onion soup mix
  • 1 packet au jus gravy mix For dipping
  • 3 cups water For preparing au jus
  • Fresh chopped parsley for garnish (optional)

Method

Preparation
  1. In a large skillet over medium heat, melt the butter and then add the sliced onions. Stir occasionally for about 12-15 minutes until softened and browned, but not burnt.
  2. Mix in the thyme, salt, and pepper, then take the skillet off the heat and set aside.
  3. Preheat your oven to 350°F.
  4. Keep the rolls intact and slice them horizontally to separate the tops from the bottoms. Place the bottoms in an 11x7 baking dish with the cut side facing up.
  5. Layer half of the provolone cheese over the rolls, followed by a generous portion of sliced roast beef. Spread the sautéed onions evenly on top.
  6. Add the remaining cheese, then place the tops of the rolls back on.
Baking
  1. In a small bowl, whisk together the melted butter and onion soup mix, then brush or drizzle it over the rolls, ensuring an even coating.
  2. Cover the dish loosely with foil, ensuring it doesn’t touch the tops of the rolls, and bake for 25 minutes.
  3. Remove the foil and bake for an additional 5 minutes to achieve a golden brown on the rolls.
  4. While baking, prepare the au jus according to the package instructions by mixing the gravy mix with 3 cups of water.
  5. Serve the sliders warm with a sprinkle of fresh parsley for garnish and the au jus on the side for dipping.

Notes

For extra flavor, consider adding a splash of Worcestershire sauce while cooking the onions. If you prefer a crisper top on your sliders, broil them for a minute after baking, but keep a close eye to avoid burning. And always, always taste as you go!
