Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, brown sugar, egg, and vanilla extract. Stir until the mixture is smooth and well blended.
- Using a 2-inch cookie scoop, scoop out dough and roll it into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
- Take a fork and flatten each ball, creating a criss-cross pattern on top. If desired, dip the fork in sugar before pressing down.
Baking
- Bake in the preheated oven for 9 to 11 minutes, or until the edges are set and the tops look dry.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
