  • 1 cup creamy peanut butter Alternatively, use crunchy peanut butter or almond butter for a twist.
  • ¾ cup brown sugar (lightly packed)
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, brown sugar, egg, and vanilla extract. Stir until the mixture is smooth and well blended.
  3. Using a 2-inch cookie scoop, scoop out dough and roll it into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Take a fork and flatten each ball, creating a criss-cross pattern on top. If desired, dip the fork in sugar before pressing down.
Baking
  1. Bake in the preheated oven for 9 to 11 minutes, or until the edges are set and the tops look dry.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
