Ingredients
  

For the Baja Sauce
  • 1/2 cup plain yogurt Greek yogurt can be a healthier alternative.
  • 1/2 cup mayonnaise
  • 3 teaspoons taco seasoning
  • 1 small jalapeño pepper (seeded and finely diced)
  • 1 clove garlic (minced)
  • 3 tablespoons fresh lime juice
  • 1/2 cup fresh cilantro (finely chopped)
  • 2 tablespoons fresh Italian parsley (finely chopped)
For the Tacos
  • 1 box frozen crispy fish tenders Use your favorite brand.
  • 1 cup shredded lettuce
  • 1 medium avocado (diced)
  • 1 medium tomatoes (diced)
  • 2 tablespoons capers
  • 1 cup shredded Mexican or taco cheese
  • 8 pieces soft corn or flour tortillas

Method
 

Preparation
  1. In a bowl, mix yogurt, mayonnaise, taco seasoning, diced jalapeño, minced garlic, lime juice, cilantro, and parsley to make the Baja sauce. Adjust seasoning as necessary and set aside.
  2. Bake or fry the frozen fish tenders according to the package instructions until crispy and golden.
  3. Take a tortilla and layer it with shredded lettuce, cooked fish, diced avocado, diced tomatoes, capers, and cheese.
  4. Drizzle generously with the prepared Baja cream sauce.

Notes
