  • 3 cups frozen hash browns
  • 3/4 cup shredded Monterey Jack pepper cheese
  • 1 cup cubed cooked ham
  • 1/4 cup green onion, well chopped
  • 4 well beaten eggs
  • 1 can (12 ounces) evaporated milk
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13 inch baking dish.
  • Spread the frozen hash browns evenly in the bottom of the prepared baking dish.
  • Sprinkle the shredded Monterey Jack pepper cheese over the hash browns.
  • Distribute the cubed cooked ham and chopped green onion evenly over the cheese layer.

Mixing

  • In a mixing bowl, whisk together the beaten eggs, evaporated milk, black pepper, and salt until well combined.
  • Pour the egg mixture evenly over the ingredients in the baking dish.

Baking

  • Bake in the preheated oven for 40 to 45 minutes, or until the casserole is set and the top is golden brown.
  • Allow the casserole to cool for a few minutes before serving. Enjoy!

Notes

Serve warm with fresh fruit or a salad. For extra flavor, serve with salsa or hot sauce. Store leftovers in the refrigerator for up to 3 to 5 days, or freeze for up to 2 months.
