  • 2 cups cooked rice Use leftover or day-old rice for best results.
  • 2 large eggs
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (e.g., carrots, peas, corn)
  • 2 pieces green onions Chopped.
  • 2 tablespoons soy sauce
  • ¼ teaspoon garlic salt Or substitute with MSG.
  • to taste Salt and pepper

Method
 

Preparation
  1. Warm the vegetable oil in a large skillet or wok over medium heat.
  2. Sauté mixed veggies for about 2-3 minutes, or until they've softened.
  3. Push veggies aside and pour in the beaten eggs. Scramble them until fully cooked through.
  4. Combine eggs and veggies, mixing well in the skillet.
  5. Incorporate cooked rice, soy sauce, garlic salt (or MSG), along with salt and pepper, into the mixture. Stir-fry for 5 minutes.
  6. Finish by tossing in the chopped green onions, giving everything another good mix before serving hot.
