  • 3 medium carrots, diced
  • 2 stalks celery, diced

  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup corn
  • 1 teaspoon dried thyme

Method
 

Cooking Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.
  3. Toss in the diced carrots and celery; cook for about 5 minutes, allowing the veggies to soften.
  4. Pour in the vegetable broth, followed by the diced tomatoes, green beans, corn, thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to simmer for about 20-30 minutes, until the vegetables are tender.
  6. Taste and adjust the seasoning as needed. Serve hot, garnished with fresh parsley.
