  • 1 pound ground chicken
  • 2 tablespoons red curry paste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fish sauce Can be substituted with soy sauce or tamari.
  • 1/2 cup breadcrumbs
  • 1 large egg
  • to taste salt and pepper
  • for garnish fresh cilantro

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Combine ground chicken, red curry paste, garlic, ginger, fish sauce, breadcrumbs, egg, salt, and pepper in a large bowl.
  3. Mix until thoroughly combined.
  4. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until they are golden brown and cooked through.
  6. Garnish with fresh cilantro before serving.
