  • 4 medium bell peppers Choose red, yellow, or green depending on your taste
  • 1 lb ground turkey or lean beef Feel free to swap for chicken or plant-based protein
  • 1 cup cooked rice White or brown
  • 1 14.5 oz can diced tomatoes Drained
  • 1 small onion Chopped
  • 2 cloves garlic Minced
  • 1 cup shredded cheddar cheese For topping
  • Salt and pepper To taste
  • Italian seasoning Optional
  • Herbs of choice Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, sauté the onion and garlic until fragrant.
  4. Add the ground meat and cook until browned, then drain the excess fat.
  5. In a bowl, combine the meat mixture with rice, diced tomatoes, salt, pepper, and additional seasonings if desired.
  6. Generously stuff each bell pepper with the filling and arrange them upright in the baking dish.
  7. Cover the dish with aluminum foil and bake for about 30 minutes.
  8. Remove the foil, add cheese on top of each pepper, and bake uncovered for an additional 10 minutes until bubbly and golden.
