Preparation
- In a bowl, combine soy sauce, dark soy sauce (if using), corn starch, sugar, rice vinegar, ground pepper, chili garlic sauce, sesame oil, and minced garlic. Adjust the sauce ingredients to match your desired sweetness, saltiness, sourness, and spice. Set aside.
- Boil water in a small pot over high heat. Add the ramen or chosen noodles and cook until they’re just al dente—usually 2-3 minutes less than package instructions. Drain and set aside. If preferred, run through cold water to stop the cooking process and wash away excess starch.
Cooking
- In a pan, heat a little oil over medium-high heat. Add your sliced veggies, mushrooms, or tofu. Sauté for a few minutes until cooked to your liking.
- Stir the sauce mixture again to ensure no starch is stuck at the bottom. Pour it into the pan with the veggies/tofu and let it simmer for 2-3 minutes until thickened.
- Add the cooked noodles to the pan, mixing thoroughly to coat them with the sauce. Cook for an additional 3 minutes until the noodles absorb some sauce. Taste and adjust seasoning as necessary.
Serving
- Garnish with chopped scallions and sesame seeds. Enjoy your Easy Saucy Ramen Noodles hot!

Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to three days. When reheating, simply add a splash of water or broth to keep the noodles from drying out, then heat on the stovetop or in the microwave. Customize with different veggies or proteins as per your preference.
