  • 4 pieces ripe jitomates (tomatoes) Fresh jitomates are preferred, but other tomato varieties can be substituted.
  • 2 pieces chiles guajillo (seedless) Adjust the type or amount of chili for desired heat level.
  • 1 clove garlic
  • 1/4 piece onion
  • to taste Salt
  • 1 cup water Used for boiling and blending.

Method
 

Preparation
  1. Start by boiling the jitomates, chiles, garlic, and onion in a pot of water until the jitomates are soft.
  2. Carefully strain the mixture, reserving the cooking water.
  3. In a blender, combine the softened ingredients with about 1 cup of the reserved water and blend until smooth.
  4. Pour the mixture back into the pot and season with salt to taste.
  5. Simmer on low heat for about 5 minutes to intensify the flavors.

Notes
