Ingredients
  

For the Base
  • 1 cup salted butter Use at room temperature for easy melting
  • 1/2 cup packed light brown sugar
  • 1 tsp pure vanilla extract
  • 3 cups rolled oats Old-fashioned oats can also be used
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
For the Chocolate Layer
  • 1 cup milk chocolate chips For a more intense flavor, dark chocolate can be used
  • 3/4 cup smooth peanut butter Substitute with sunbutter for nut-free version

Method
 

Preparation
  1. Line an 8x8-inch baking dish with parchment paper for easy removal later.
  2. In a medium saucepan, melt butter over medium-low heat. Stir in brown sugar and vanilla extract until combined.
  3. Add the rolled oats, ground cinnamon, and sea salt, cooking and stirring for about 5 minutes until everything is mixed well.
  4. Pour half of this mixture into the prepared dish, spreading and packing it down firmly.
  5. In a liquid measuring cup, melt chocolate chips and peanut butter in the microwave using 30-second increments, stirring in between until fully melted and smooth.
  6. Pour the melted chocolate mixture into the pan, reserving a little for drizzling on top. Then add the remaining oat mix, packing it down again.
  7. Drizzle the reserved chocolate mixture over the top for a decorative finish.
  8. Chill in the fridge for at least four hours before cutting into bars. Enjoy!
