Preparation
- Line an 8x8-inch baking dish with parchment paper for easy removal later.
- In a medium saucepan, melt butter over medium-low heat. Stir in brown sugar and vanilla extract until combined.
- Add the rolled oats, ground cinnamon, and sea salt, cooking and stirring for about 5 minutes until everything is mixed well.
- Pour half of this mixture into the prepared dish, spreading and packing it down firmly.
- In a liquid measuring cup, melt chocolate chips and peanut butter in the microwave using 30-second increments, stirring in between until fully melted and smooth.
- Pour the melted chocolate mixture into the pan, reserving a little for drizzling on top. Then add the remaining oat mix, packing it down again.
- Drizzle the reserved chocolate mixture over the top for a decorative finish.
- Chill in the fridge for at least four hours before cutting into bars. Enjoy!
