Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the graham cracker crumbs, brown sugar, melted butter, and cinnamon until well blended.
- Press this mixture firmly into the bottom of mini muffin tins to create the crust.
- In another bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the egg, cornstarch, heavy cream, vanilla extract, and Greek yogurt; mix until fully combined.
- Pour the cheesecake filling over the crusts in the muffin tins.
- Bake for about 10-12 minutes, or until the filling is set.
- Allow to cool, then top each cheesecake bite with the diced strawberries mixed with a tablespoon of sugar.
- Serve chilled and enjoy!
