Ingredients
  

For the crust
  • 3/4 cups graham cracker crumbs
  • 3 tablespoons brown sugar
  • 3 tablespoons butter, melted
  • 1/4 teaspoon cinnamon
For the cheesecake filling
  • 8 ounces cream cheese, room temperature Use room temperature for smooth texture.
  • 1 large egg, room temperature Use room temperature for smooth texture.
  • 1/4 cup sugar
  • 1 teaspoon corn starch
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 3 tablespoons Greek yogurt (or sour cream) Feel free to substitute Greek yogurt with sour cream.
For the topping
  • 1 and 1/2 cups strawberries, diced
  • 1 tablespoon sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the graham cracker crumbs, brown sugar, melted butter, and cinnamon until well blended.
  3. Press this mixture firmly into the bottom of mini muffin tins to create the crust.
  4. In another bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add the egg, cornstarch, heavy cream, vanilla extract, and Greek yogurt; mix until fully combined.
  6. Pour the cheesecake filling over the crusts in the muffin tins.
  7. Bake for about 10-12 minutes, or until the filling is set.
  8. Allow to cool, then top each cheesecake bite with the diced strawberries mixed with a tablespoon of sugar.
  9. Serve chilled and enjoy!

Notes
