- Cook lean ground beef in a skillet, breaking it into small pieces with a wooden spoon. Drain any grease. Add taco seasoning and water, stirring to combine.
- Heat oil in a small skillet over medium-high heat. Cook corn tortillas one at a time until golden and slightly crisp on both sides. Remove to a paper towel.
- Assemble Pizzas:
- - Spread a thin layer of enchilada sauce on one corn tortilla. Top with refried beans and a spoonful of taco meat.
- - Sprinkle shredded cheese over the meat and place another corn tortilla on top.
- - Spread another thin layer of enchilada sauce on top and sprinkle with more cheese.
- Bake at 400°F (200°C) for about 10 minutes, until cheese is melted and bubbly.
- Garnish with olives, diced tomatoes, chopped green onions, and sour cream. Cut into wedges to serve.
