Ingredients
  

  • 1 cup mayonnaise
  • 2/3 cup sour cream
  • 3 tablespoons fresh lime juice
  • 2 tablespoons taco seasoning
  • 1 bag (16 ounces) tri-color coleslaw mix
  • 1 diced red pepper
  • 1 1/2 cups grape tomatoes, halved
  • 1 can (15.25 ounces) black beans, drained and rinsed
  • 1 1/2 cups grilled or blackened corn
  • 1 jalapeno, seeded and minced
  • 1/2 cup chopped fresh cilantro
Kosher salt and freshly ground black pepper, to taste

Method
 

  1. In a small bowl, stir together the mayonnaise, sour cream, lime juice, and taco seasoning until well combined.
  2. In a large serving bowl, add the coleslaw mix, diced red pepper, halved grape tomatoes, black beans, grilled or blackened corn, minced jalapeno, and chopped cilantro.
  3. Gently stir in the mayo-sour cream mixture until all ingredients are evenly coated.
  4. Season the coleslaw with kosher salt and freshly ground black pepper to taste.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Notes

This Easy Mexican Coleslaw is a versatile side dish that pairs well with tacos, grilled meats, or as a topping for fish tacos. It can be stored in the refrigerator for up to 3 days. Stir well before serving if any moisture has accumulated.
