Ingredients
  

  • 1 cup mayonnaise
  • 2/3 cup sour cream
  • 3 tablespoons fresh lime juice
  • 2 tablespoons taco seasoning
  • 1 bag (16 ounces) tri-color coleslaw mix
  • 1 diced red pepper
  • 1 1/2 cups grape tomatoes, halved
  • 1 can (15.25 ounces) black beans, drained and rinsed
  • 1 1/2 cups grilled or blackened corn
  • 1 jalapeno, seeded and minced
  • 1/2 cup chopped fresh cilantro

Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • In a small bowl, stir together the mayonnaise, sour cream, lime juice, and taco seasoning until well combined.
  • In a large serving bowl, add the coleslaw mix, diced red pepper, halved grape tomatoes, black beans, grilled or blackened corn, minced jalapeno, and chopped cilantro.
  • Gently stir in the mayo-sour cream mixture until all ingredients are evenly coated.
  • Season the coleslaw with kosher salt and freshly ground black pepper to taste.
  • Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Notes
