  • 4 cups Ripe tomatoes, chopped Heirloom, cherry, or grape tomatoes can be used.
  • 1/4 cup Olive oil Use high-quality olive oil for best flavor.
  • 3 tablespoons Balsamic vinegar Adjust according to personal taste.
  • 2 cloves Garlic, minced
  • 1/4 cup Fresh herbs (basil, parsley, or oregano) Feel free to mix different herbs.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Adjust to taste.

Method
 

Preparation
  1. Wash the tomatoes and chop them into desired sizes, either wedges or bite-sized pieces.
  2. In a mixing bowl, combine olive oil, balsamic vinegar, minced garlic, and your chosen herbs. Season with salt and pepper to taste.
  3. Add the chopped tomatoes to the mixture and gently toss to ensure they’re well coated in the marinade.
  4. Let the tomatoes marinate for at least 15 to 30 minutes to enhance their flavor.
