  • 3/4 cup 3/4 cup carbonated lemon-lime beverage Any brand works.
For the Cake (Using Box Mix)
  • 1 box 1 box of yellow cake mix
  • 4 additional eggs 4 additional eggs
  • 3/4 cup 3/4 cup vegetable oil Can be replaced with applesauce for lighter option.
  • 1 box 1 (4 oz) box instant lemon pudding
For the Glaze
  • 1 cup 1 cup powdered sugar
  • 2 tablespoons 2 tablespoons lemon juice
  • 1 teaspoon 1 teaspoon milk

Method
 

From Scratch Directions
  1. Preheat your oven to 350°F (175°C) and grease your cake pans.
  2. Cream together the softened butter and sugar until fluffy. Add in the first set of eggs and continue mixing until well combined.
  3. Gradually add the flour, instant lemon pudding mix, and lemon juice. Mix until smooth.
  4. Fold in the carbonated lemon-lime beverage gently to retain bubbles.
  5. Pour the batter evenly into the pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let the cakes cool for 10 minutes before transferring to wire racks.
Directions Using Box Cake Mix
  1. Preheat the oven to 350°F (175°C) and prepare your pans.
  2. In a large bowl, combine the boxed cake mix, eggs, vegetable oil, and lemon pudding mix.
  3. Mix well and then stir in the lemon-lime soda until fully incorporated.
  4. Pour the batter into the prepared pans and bake for 30-35 minutes or until done.
  5. Allow the cake to cool before removing it from the pans.
Making the Lemon Glaze
  1. Mix powdered sugar, lemon juice, and milk in a bowl until smooth.
  2. Drizzle the glaze over the cooled cakes before serving.
